Jalapeno Poppers


Jalapeno poppers are the absolute best. They can be made ahead and frozen for a few days before an event or the filling can be made and gifted to someone. They are also inexpensive to make and a great crowd pleaser. 

When I normally make this recipe, I usually omit the bacon, so I haven't got the hang of wrapping it around the pepper yet. 

As you can see in my attempt at bacon wrapped jalapeno poppers, they don't look that great, but they do taste amazing!


Step by step guide:


Cut the jalapenos in half, lengthwise.

Using a spoon, scoop out the ribs and seeds.


In a bowl add, softened cream cheese, sofrito, cheese, salt, and pepper.


Fill jalapenos with cream cheese mixture


Wrap with bacon if using. Bake at 400F for 20-25 mins



Ingredients:

  • 5 Large jalapenos cut lengthwise
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheese
  • 2 tbsp sofrito
  • 10 pieces of bacon (optional)
  • ½ tsp salt 
  • ½ tsp pepper


Instructions:

  1. Line a baking sheet with parchment paper and preheat oven to 400 F.
  2. Place softened cream cheese, sofrito, salt, pepper and shredded cheese into a bowl and mix together. Set aside.
  3. Take the jalapenos and scoop out the ribs and seeds with a spoon. Place on baking sheet and sprinkle with a little salt. 
  4. Fille each jalapeno with the cream cheese mixture, then wrap with one slice of bacon (if you’re using it) and secure with a toothpick.
  5. Bake for 20-25 minutes.
